Tomato Chicken by the Yee Family
4 Chicken Breasts (de-boned, Skinned)
1 Medium Onion
1/4 Bell Peppers
1 Large Tomato
Cut chicken into chunks & place in a bowl. Chop/dice/slice/onion & bell pepper (place in separate bowl). Cut tomato into slices (however you prefer) and place in another bowl.
Season chicken with garlic salt, pepper & flour. Deep fry until done. Place in a large bowl. Drain grease from pot leaving enough crumbs and enough oil to saute onions & peppers. Cook onions & peppers until tender, then add 1 cup of water. Let come to a boil & add tomatoes. Cook tomatoes until tender (5-10 mins).
In separate bowl, mix 1/4 cup of cornstarch, 1/8 cup of Soy Sauce & 1/2 cup of water. Mix thoroughly. Add to boiling water, tomatoes, onions & peppers. If mixture is too thick, add more water. If too thin, add more cornstarch to thicken. (mix cornstarch with water before adding to mixture). Pour over chicken & mix thoroughly. Serve over rice. Serves 4-5 people. Enjoy!
